The Friday Cocktails return (at least this week) for this lovely winter (or tropical, depending on how you want to see it) gem. I’ve seen a similar recipe floating around the interwebs as “Sex on a Snowbank, but I think that would need more booze [wink, wink]
Ingredients
2 parts Blue Chair Bay Coconut Spiced Rum
1 part Bacardi White Rum
6 tablespoons coconut cream
6 large ice cubes
splash of vanilla extract
1 teaspoon honey
desiccated (finely shredded, unsweetened) coconut
You will also need: a blender, a martini-style glass and a food-safe paint brush
Directions
Prepare your glass: using the paint brush, brush the honey along the rim of the glass, as glue. Sprinkle coconut in a shallow dish and dip the rim into it. Set aside.
For the cocktail, combine rums, coconut cream, ice cubes and vanilla extract in a blender and blend until smooth. Pour into the prepared glass and serve immediately.
