Heya! So, it’s been almost a month since I posted anything and I could give you all sorts of excuses on why, but we’ll leave it as “I needed a break”. While I am generally a hater of the month of January, the end of May to the end of June comes is a close second as bad in the mental health department. Suffice it to say, I AM BACK! I went strawberry picking so here is the first of the Strawberry recipes: Strawberry Almond Muffins with Strawberry Glaze. They are light and delicious and very strawberry-y. Just be careful not to add too many berries, lest the muffins get all mushy!

Starting off the week with some Strawberry Cheesecake Muffins. Except that I didn’t have any actual strawberries, just strawberry jam. What to do? I made some cheesecake filling (cream cheese, egg yolk and sugar), chilled it and then added some of the jam. Result: muffin-y outside, creamy strawberry cheesecake filling. Delicious! And a new trick when berries aren’t at hand!
I went apple picking yesterday and of course that means it is the season for Apple Cider Donuts, so I was inspired to make a slightly healthier version of said doughnut in muffin form (so baked not fried). They do have that special cider donut taste though, so overall a big success. Warning though, if you make this recipe, if feeds a crowd — it’s enough batter for 18 standard sized muffins, so come hungry or be able to pass them out to friends and neighbors.
Sunday Morning Breakfast: Seriously the easiest muffins ever. Bananas, pecans, a bit of oatmeal crumble. On the breakfast table, all warm and delightful, in under an hour (under 45 minutes if you hurry a bit).
So, in reference to the photo that looks like claws are coming to steal the muffins: my parents have this decorative metal lobster hanging on the porch railing, with the claws just above railing level. I thought that it was funny in a halloween like way, to have the clws coming up from the deal to steal my Banana Pecan Crunch Muffins. Nom. Happy Halloween. 🙂
