Fried Goat Cheese Balls with Drizzled Honey

I was a little apprehensive about making these. I love goat cheese and fried cheese in general is a good thing, but somehow I was both intrigued and nervous about these. Turns out, that nervousness was unfounded because OMG are these delicious. They are tart and salty, crunchy and silky and the honey really puts them over the top. Do not skip the freezing step otherwise the goat cheese will be too soft and will melt while you are frying. Also, really only make as many as you think that you will need because they aren’t as good when they cool to room temperature and you definitely don’t want to microwave to reheat, unless you like cleaning goat cheese from the inside of your microwave. Just saying.

3-Cheese Manicotti in Creamed Spinach Sauce

It’s not much of a secret that two of my favorite foods are cheese and …. spinach. Yes, spinach. That statement is almost as ridiculous as stating that I love (gasp!) brussels sprouts (which I do), but spinach is something that I could eat every day, every meal. Anything that combines spinach AND cheese is high of the list of favorites, which this does. As we get close to the end of cheese week in the ingredient game, I present this amazing 3-Cheese Manicotti in Creamed Spinach Sauce. It’s vegetarian. It’s filling. It’s delicious and I will be making it over and over again.

Oven-Baked Caramelized Onion Mac + Cheese

Mac & Cheese is one of those guilty pleasures because all those carbs and cheese are a bit much, but I did make this lovely Oven-Baked Caramelized Onion Mac + Cheese for dinner last night. The caramelized onions add a huge depth of flavor. Bold, creamy Cabot Seriously Sharp Cheddar is my favorite.

Chicken Cheddar + Black Bean Quesadillas

Starting off another week of the “Ingredient Game”, this week is “Cheese Week” so here is a super quick snack or appetizer. The whole things comes together in just about 20 minutes an can feed a crowd. Honestly, I just made 2 full quesadillas and will save the rest for tomorrow or the next day because 10 tortillas (or 5 quesadillas) really feeds a crowd!
