Deviled Egg Footballs

The Superbowl is on Sunday so I’m trying out a few recipes in the run up to the big game. A friend shared this idea to my FB page last weeka dn I took it as a little bit of a challenge. One thing of note when making these: under-season (or leave out completely) with salt in the egg filling… pepper, parika, all good. But the bacon is so salty that you might want to add very little to the mixture, lest you have a salt-lick on your hands!

Mini- Chocolate White Chocolate Chip Cookies

Mini Cookies. Aren’t they just the best? Two bites and you’ve scarfed one down. I make mini-cookies every now and again, mainly because I have this huge cookie jar and I make a contest out of it on my Facebook page to see who can guess how many there are. Last year I did the standard Chocolate Chip Cookie with mini-chips, this year, it’s the Chocolate White Chocolate Chip version. If you cant to pay along, head on over to the FB page and enter!

Oven-baked Honey Garlic Chicken Wings

Here are a few numbers for you:
1. Superbowl Sunday is the second biggest annual “food event” in the US, trailing only Thanksgiving.
2. The 5 most consumed foods, according to Forbes, are: pizza, nachos, chicken wings, chili and beer. I guess beer is a food.
3. According to the National Chicken Council’s annual report, during the Super Bowl 2017 weekend, Americans ate 1.33 billion chicken wings. That is a lot of wings.

So all of this said, I’m going to be making some Superbowl treats in the run up to the big game. I am not a big NFL fan (give me ice hockey any day), but it’s a good excuse to make food. So I am starting with these yummy. Oven-baked Honey Garlic Chicken Wings … Easy to make, no greasy messy, very crispy, very flavorful.

A Variation on ATK’s Thick-Cut Oven Fries

I like French Fries. I think a lot of people do. I don’t, generally speaking, like frying things though and I don’t have an air-fryer, and I doubt that I will be investing in one. I make oven fries, the kind that you bake in the oven, sort of often and they always turn out ok. Then, the other day, on the first episode of America’s Test Kitchen’s 19th season, they did this somewhat strange thing to make their oven fries better: they coated them in this kinda gross looking (and feeling) corn-starch goo. Here’s a clip of it.

I was skeptical, but decided to give it a go. It’s a lazy Sunday though, and I didn’t feel like going to the shops and only had fingerling potatoes in the pantry so I decided to go with those. Yup, perhaps not surprising, they ended up quite perfect. Golden and crispy outside, nice and fluffy inside. Even though the goo process felt really wrong, it made them definitely lots better than my usual routine. Definitely a keeper method.

Apricot-Tarragon Cocktail Cookies

Back to trying out one of my rather unusual flavor combinations, this time in the form of finely chopped apricots, the herb taragon (which has a rather licoricey flavor) and olive oil. They are really very good, despite my weird pairings. Would go equally nice with a cup of coffee or tea, or on a cheese plate with some fig jam. Really quite delightful, especially if you aren’t into the overly sweet type of cookie.
