Open-faced Maine Crabmeat Melt

Lunch! I don’t normally show off my lunch — heck, most of the time, I skip lunch altogether — but today, for the CSPS Cook/Bake-a-Long Seafood Week, I made these awesome Open-face Crabmeat Melts with a fresh tomato from my garden (the only really big tomato that really did well, though I did grow hundreds of cherry tomatoes). The crabmeat was from Maine, but any fresh crabmeat will do. Now I ate too much and could really use a nap! 🙂

Scallops with Red Curry Rainbow Veggies

I love this recipe. Not just because I love scallops (I definitely do) and not just because it is very pretty and colorful, but also because it is really easy to make and really versatile. You can make it with other veg thrown in (I’ve added parsnips and broccoli at various times) and the protein can be swapped out too — instead of scallops, you can totally do shrimp or chicken or turkey. I’ve never tried pork or beef, but I think they might work as well. Serve with rice; this is on the table in under 30 minutes!

Smoked Salmon and Chives Deviled Eggs

You might be an overly poshy food blogger when, whilst making deviled eggs during a global pandemic, you think “oooh, I may have stashed smoked salmon in the freezer for an emergency!”

For the record, there is no such thing as a smoked salmon emergency. Ever. No matter how delish it is.

But, the deviled eggs are yummy. And my chives survived the winter.

Salmon and Oatmeal Cat Treats

So, remember a few weeks ago, I made Peanut Butter + Pumpkin Dog Treats and at the time, I did promise to make cat treats too. Well an eternity has passed, or so it seems, and I am finally getting around to making these kitty treats. They are Spencer and Sullivan approved and I believe quite yummy because I’ve had to hide them in the trunk of my car so that they won’t eat them all.
