Champagne Mango Coconut Tart

Every year right about this time of year, Champagne Mangoes (the smaller, all yellow ones) go massively on sale at Whole Foods, often 5 for $5, and sometimes even cheaper. That was the impetus of this tart… mangoes are cheap, the weather is miserable and this would cheer up and otherwise dreary day (if nothing else, just the color!). It’s modeled after a Key Lime Pie, but not quite as tart. The coconut is actually a last minute addition, only because I had a package of shredded coconut in the house. All in all, not much of a joke on this April Foods Day.

Chocolate-Cayenne Cocktail Cookies

Back to cookies and back to chocolate. It’s been a few weeks. Where have you been all my life? 🙂

These cookies aren’t very sweet, so be forewarned, but they are spicy and delicious. And as the name might suggest, they actually go very well with a glass of red wine … or a cocktail (though I guess that depends on which one). They may not look like much — these teeny tiny cookies — but they are addictive!

Curried Butternut Squash Soup

Ok, back from a little hiatus from blogging about food, but here I am again. The weather has been miserable, even for New England spring weather, so I made this butternut squash soup as comfort food. It’s lovely and super easy. Besides having to roast the squash for an hour (which is hands off) I think the whole thing took an additional 15 minutes beyond that. And you could use any other kind of squash or pumpkin too. The curry is super nice, so if you can, serve with naan (both Trader Joes and Whole Food sell some good naan, if you are so included).

Tagliatelle with Wild Boar Ragu

The other evening, we went out to a restaurant that had a Wild Boar Ragu special. It was phenomenal and inspired me to “reverse engineer” it and try to make it myself. This is the recipe that I came up with, and I am proud to say that I think that my version is even better than the one served at the restaurant. It was seriously delicious.

Blueberry Ricotta Muffins with Lemon Sugar Topping

I must have a dozen variations on the blueberry muffin theme here on CSPS, and here is yet another one. This one is unique in that I was mostly out of dairy and only had ricotta in the house, so I used that. Also, there is actually less sugar in these than some of the other sorts. They did come out lovely though, with that extra bit of lemony sugar crunch on the top.
