Donuts Make My Brown Eyes Blue

June 5 is National Doughnut (Donut) Day, so here is a quick and easy baked doughnut, complete with Misheard Song Lyrics. Enjoy!

Ingredients
2 cups cake flour, sifted
3/4 cup granulated sugar
2 teaspoon baking powder
1/4 teaspoon ground nutmeg
1 teaspoon salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 tablespoons butter, melted

You will also need a doughnut pan for the oven as these are baked, not fried.

Directions
Preheat oven to 425F. Spray two 6-cavity donut pan with nonstick cooking spray (if you only have one, you can bake in 2 batches)

Sift together cake flour, sugar, baking powder, nutmeg, and salt in a large mixing bowl. Whisk in buttermilk, eggs, and butter and beat until just combined. Fill each donut cup until about 2/3 full (I do this by putting all the batter in a large zip top bag, cutting a hole in the corner and piping in the batter.

Bake 7-9 minutes, or until the top of the donuts spring back when touched. Cool in pan for about 4-5 minutes before removing from pan and then cool completely. Complete donuts with either a dusting of powdered sugar, vanilla icing, chocolate glaze (with sprinkles?), or cinnamon-sugar topping. Best served fresh on the same day.
