French-style Apple Custard Tart

Recipe 1000. One thousand. A one with three zeros after it. Wow. Ugh. Holy Cow. That’s a lot of food. Yes, this French-style Apple Custard Tart marks the 1000th recipe on this here website. I had wanted to hit 1000 at the 4 years mark, but I am a few weeks late. Oh well. I have a day job afterall.

This tart uses the smallest Pink Lady Apples that I have ever seen. They were really only about 2 inches in diameter. They were even sold as mini apples. You could, of course, use “normal sized apples” but as I had these, I used these instead. Note that this tart isn’t overly sweet, so if you are an “a la mode” person, definitely scoop on the ice cream!

Meyer Lemon Margaritas

Today, February 22, is National Margarita Day. This either makes no sense (“Why in the world would it be decided to have national margarita day in February when it is cold and snowy?!?”) or is completely ingenious (“Hey, it’s National Margarita Day! What a great excuse to have a margarita in the middle of the day on a Sunday when it is snowy and miserable outside!”). Either way, I’m making a drink! And because it is still Meyer Lemon season, my Margarita of choice is this one. Bottoms up!

Pistachio-Cardamom Snowball Cookies,
with Black Cherry Jam

I didn’t really have a plan when I started in on this recipe. I knew that I wanted to make snowball cookies, because afterall, it is the “Winter of Discontent” here in greater Boston. But I had made snowball cookies before (during the snowstorm of February 2013, in fact) and I don’t like to repeat exact recipes. So rummaging through the pantry, I came up with a bag of unsalted pistachios and some homemade cherry jam. Added some cardamom for a winning combination.

Raspberry Sweetheart Tartlets

Sometimes you just need a quick and easy dessert. These little (4 inch) tartlets might just be the thing. Here they are dressed up for valentines day, but no reason that you couldn’t put stars in the middle for the 4th of July or a flower in the spring. They’re quick to put together — start to finish, including baking time is just about an hour (depending on how long you let your dough rest — at minimum 20 minutes which is just enough time to make the filling). The recipe easily makes 4 tartlets; if you really stretch it, you can get 6 out of this (depends on how deep the tartlets pans are). Now, where is the a la mode?
