Sunshine in Jars: Meyer Lemon Jam and Meyer Lemon Curd

Sunshine in jars! Every year, I fall in love with Meyer Lemons all over again. They are beautifully sweet yet tart, a little bitter, and oh so juicy. Because they are mostly only available in these parts in winter, I try to make them last as long as possible with jams and jellies, curds and sugars. So here we have two of those things: jam and curd. Very delicious for breakfast or tea, add a bit of curd to yogurt or even a vinaigrette. Delicious.

When life hands you beat up looking bananas, make some spectacular Caramel Rum Banana Streusel Muffins! This recipe is actually originally for banana *bread*, but I have now made this same recipe also as coffee cake and muffins. Cranberry Chocolate Chip Tea Bread

Here is a quick little recipe that ends up feeding a crowd. This Cranberry Chocolate Chip Tea Bread is quick to make (no mixer needed!), not too sweet and delightful for a snack or breakfast. It’s also festive and seasonal for this time of year! Note that you can halve this recipe is you only need one big loaf (or two smaller loaves).

Caramel Pecan Banana Bundt Cake

I’ve had company visiting for the weekend (which actually seems to often be the case!) so to make the “hey, sure, you can sleep in the spare bed” more like a bed and breakfast experience, I made some banana-bread like thing to snack on in the morning. I’m not sure if I should call this banana *bread* or *coffee cake* so I went with Bundt Cake, just because of the pan I used. Super light and fluffy; totally yummy.

Apple Walnut Crumble Bars

The first time that I heard about apple butter, I was very confused. It’s a bit of a misnomer of course — there is no daily in this butter! In essence, it is just very concentrated apple sauce. Sort of a jam. Not even close to being a jelly. The nice thing: it works great as an addition to pies and makes a great filling for these bars. You can of course make it yourself, but it seems to be readily available in the shops these days too.
