“Portable” Chocolate Cream Pies, in jars

So, how does one take a chocolate cream pie to a picnic, when you don’t have a table, it’s windy and sand is going everywhere and there is no chance that you will be able to “slice” it? Why, you make it in jars. Mason jars will do the trick, as so these Weck jars. Perfect way to end a meal on a beach!

Ingredients
1 cups finely crushed Nabisco Famous Wafers (or Oreos without the filling)
1/4 cup butter, melted
3/4 cups sugar
1/4 teaspoon salt
4 egg yolks
3 cups whole milk
12 oz bag semi-sweet chocolate chips
1/8 cup butter
1 tablespoons vanilla extract
1 cup heavy cream
1 tablespoon sugar
1 teaspoon vanilla extract
chocolate sprinkles (optional)

You will also need 8 4-ounce jars

Directions
Preheat oven to 350F. In a medium bowl, combine graham crackers and butter, and mix well. Divide equally among the 8 jars and press to bottom. Bake in preheated oven for 10 minutes, until crust gets crisp. Let cool completely.

In a medium bowl, whisk egg yolks into the milk, then set aside. Combine sugar and salt in a pan over medium-high heat. Slowly add milk mixture to the sugar, whisking constantly until the mixture comes to a low boil (takes about 10 minutes). Turn the heat down, and stir another 2 minutes, until mixture thickens. Remove from heat. Stir in butter, vanilla, and chocolate chips, mixing well until butter and chocolate is melted and incorporated. Transfer to a bowl, cover with plastic wrap, and refrigerate for 4-6 hours.

Transfer cooled pudding into a large plastic bag and cut off the corner. Gently squeeze the pudding mixture into the mason jars, on top of the chocolate wafer crust.

In a medium bowl, combine whipping cream, sugar and vanilla extract. Beat until mixture thickens to a whipped cream (I used my hand mixer, but if you’re ambitious, you can just whisk) Transfer to a medium plastic bag, snip the corner off the bag, and pipe the whipped topping onto each jar. Decorate with chocolate sprinkles, if using.
