I’m all about the unique flavor combinations and this cookie falls right in that category. Orange and Walnut? Sure. Orange and Chocolate? A classic. Throw in some sea salt? Hmmm. Now we’re getting a little stranger. Add them all together? Brilliant. Worked out really well and I am pleased with the experiment. Don’t worry, they aren’t all that salty, but the salt does bring out the other flavors. Yum.

I’m often asked if I can “adjust my recipes” for people to make them “gluten free”. Well, unfortunately not. It’s not quite so easy, and because I am not a celiac, I don’t really have a reason to eat GF. I actually have very strong opinions of eating gluten free, but will save those for another day. At any rate, there *are* recipes that are naturally gluten free. This is one of them. Made of cashew butter, eggs, brown sugar, baking soda and chocolate chips, there is no wheat-based flour to be found. They are yummy, but a little on the crumbly side. Nevertheless, a good snack.
Did you know that this week has been National Chocolate Chip Cookie Week? No? Well, frankly me neither until a few days ago, but it seemed like a good excuse to make these mini (bite sized) mini-chocolate chip cookies. Pretty standard recipe but always good. And because they are small, they bake up quickly. Enjoy!
Crumble bars are definitely my “go to” dessert (sort of like variations on the blueberry muffin are my go to breakfast item). I think that there must be at least a dozen crumble bar recipes on this site at this point. They are just so eary and the variations are endless. Sometimes I add nuts. Sometimes I add oatmeal. There is always fruit. They are always yummy.
My kitchen smells like apple pie and there isn’t an apple pie anywhere to be found. While apple pie would actually be nice right about now, I have just finished making these here cookies — which small just like apple pie. Cinnamon White Chocolate Appledoodles… sort of a cross between white chocolate chip cookies, snickerdoodles and apple pie. They use Jammie Bits from King Arthur. Yum yum yum!
