Cinnamon White Chocolate Appledoodles

My kitchen smells like apple pie and there isn’t an apple pie anywhere to be found. While apple pie would actually be nice right about now, I have just finished making these here cookies — which small just like apple pie. Cinnamon White Chocolate Appledoodles… sort of a cross between white chocolate chip cookies, snickerdoodles and apple pie. They use Jammie Bits from King Arthur. Yum yum yum!

Ingredients
3/4 cup butter (one and a half sticks), softened to room temperature
3/4 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla
1 egg
2 cups flour
1 small (3.5 ounces) box instant vanilla pudding mix, not prepared
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
pinch nutmeg
1 cup cinnamon apple jammie bits (see note)
1 cup white chocolate mini chips

for the Cinnamon Sugar
1/3 cup sugar
1 teaspoon ground cinnamon

Directions
In the work bowl of your stand mixer, cream together butter and sugars. Mix in vanilla and egg until smooth.

In a medium bowl whisk together flour, pudding mix, baking soda, cinnamon, salt, and nutmeg. Add dry mixture to wet ingredients and mix until combined well. Stir in apple jammie bits and white chocolate chips. Chill in the fridge for one hour or so.

Meanwhile, make the Cinnamon Sugar: In a small bowl, combine the sugar and cinnamon.

Preheat oven to 350F and line baking sheets with silpat or parchment paper.

Using a 2-tablespoon disher, scoop cookies and roll into a ball. Then roll generously in the cinnamon sugar. Place on prepared baking sheet and flatten slightly.

Bake for 12-13 minutes. Allow cookies to cool for a few minutes on the baking sheet before removing to cook completely on a wire rack.

Note: Jammie Bits are little flavored bits of jam that melt into baked goods. They are made by King Arthur Flour and can only be bought here.
