I was going to call these cookies “Clearing out the Pantry” or “Everything AND the Kitchen Sink Cookies” because they are loaded with as many varieties of chocolate chips as I could find: Semi-sweet chocolate, white chocolate, espresso chips and Bailey’s Chips. In fact, there are so many chips in the cookies that I had a hard time getting them to stick together. But in the end, they did, and combine all those chips with a chocolate cookie as the base and we have chocolate overload (appropriate given that is Chocolate-Week in the CSPS Bake/Cook-a-long).

It’s always cool when you find a new ingredient. This time, I found Lemon Chips from King Arthur Flour. Sort of like Chocolate Chips, but lemon, of course. And they are very lemony. I only ordered one package as a test run, but I will definitely be ordering more! Very Lemony Lemon Chip Poppy Seed Blondies, pair nicely with a glass of iced tea. Trust me. 🙂
After the success of the Coconut Toffee Bit Florentines last week, I thought I would have a go at another kind: Cheery Berry Jammy Bits Oatmeal Cookies. What is a jammy bit? King Arthur makes these tiny (about 1/8 inch square) fruit flavored gummi-bits, that you can add to baked good, they melt and become these little pools of flavor. In this case, I chose cherry and raspberry. Turned out really nice with crispy bits of fruit flavors in an oatmeal florentine.
Coconut Toffee Bit Florentine-Style Oatmeal Cookies, with Dark Chocolate Drizzle
I think that I might have mentioned this before, but I am very much a fan of “florentine-style” cookies — very thin, almost lace-like, crunchy and a little sticky. As most of you know, I am also a huge fan of coconut, so with these, I combined the best of both: a little coconutty, very thin and crispy, and just a touch of chocolate for good measure. Great afternoon pick-me-up; very addictive.
Who here has stayed at the Hilton Hotel’s DoubleTree chain? You know how they hand out warm chocolate chip cookies at check-in (or anytime you ask for them, if you didn’t know that… have a cookie craving, go to the front desk!) Anyway, purportedly, these chocolate chip cookies are that recipe. I saw it on FB and even if it was a lark, the recipe looked solid, so I gave it a go. I like to play around with chocolate chip recipes anyway. These have a touch of lemon juice and a touch of cinnamon and you bake them for longer at a lower temperature. Whether they are the actual DoubleTree recipe, I have no idea, but that’s ok too.
