Lemony Lemon Chip Poppy Seed Blondies

It’s always cool when you find a new ingredient. This time, I found Lemon Chips from King Arthur Flour. Sort of like Chocolate Chips, but lemon, of course. And they are very lemony. I only ordered one package as a test run, but I will definitely be ordering more! Very Lemony Lemon Chip Poppy Seed Blondies, pair nicely with a glass of iced tea. Trust me. 🙂

Ingredients
2/3 cup butter softened to room temperature
1 cup sugar
2 eggs
4 tablespoons fresh lemon juice
Zest of two lemons
1/2 teaspoon salt
1 1/4 cups all-purpose flour
1 tablespoon poppy seeds
1 cup lemon chips

for the glaze
1 cup powdered sugar
2-3 tablespoons fresh lemon juice

Directions
Preheat oven to 350F. Create a foil or parchment sling for your 9×9 inch baking pan. Spray the foil liberally with cooking spray and set aside.

In a large bowl, stir together the butter and sugar until combined. Gradually add in the eggs and stir until just barely combined. Stir in the lemon juice, lemon zest, salt, poppy seeds and flour until a soft batter forms. Fold in the lemon chips. Spread the batter into the prepared pan and smooth out the top. Bake for approx. 22-25 minutes or until the top is set and lightly golden brown. Cool completely. Once cool, make your glaze. In a small bowl, whisk together the powdered sugar and lemon juice until a drizzle-able glaze is achieved. Drizzle over the top, just lightly — it doesn’t have to cover the whole surface. Let the glaze set, then cut into squares and serve.
