Crêpes with Nutella and Bananas

More bananas! Just like a few days ago was “National Croissant Day”, Monday is “World Nutella Day” (back in 2022, I did a whole series of nutella recipes for that), so I thought that I would get a head start on that “holiday” by making these Crêpes with Nutella and Bananas. They always remind me of markets in Europe, particularly France and Germany, were there is inevitably someone making these fresh to go. It’s something about the banana and Nutella combination that is also so reminiscent of childhood. Their quick to make and a super snack or dessert.

Ingredients (makes 8 crepes)
1 cup all-purpose flour
2 eggs
1 cup milk
1/4 cup water
1 teaspoon vanilla extract
1 tablespoon granulated sugar
1/2 teaspoon salt
2 tablespoons butter, melted
1 cup Nutella (2 tablespoons per crepe)
2 bananas, sliced (about 4 slices per crepe)
powdered sugar or whipped cream, to garnish (optional)

Directions
First, make all your crepes. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk, water and vanilla extract, stirring to combine. Add the salt and butter; beat until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Remove to a plate and repeat with remaining batter. You can stack them on the plate; they shouldn’t stick together for such a short period of time.

Taking one crepe at a time, spread on 2 tablespoons of Nutella one-quarter of the crepe and place on the banana slices, fold in half and then to quarters, so that the bottom has the Nutella and bananas. Sprinkle with powdered sugar and serve immediately.
