Harvest Dark Chocolate Sugar Cookie Acorns

Back in 2013, I made these little Sugar Cookie Kiss “Acorns” and somehow was reminded of that over the weekend, so I updated the recipe and here we go again. It’s a simple, and not too time consuming way to make little treats for autumn and might be cute for Thanksgiving or Friendsgiving. I used the Hershey’s Special Dark Kisses, but you could also use the Almond or Caramel Filled ones!

A note about the photo: before anyone gets all pedantic on me, I know that “acorns” don’t come from maple trees, but maple leaves are prettier than oak leaves, so deal with it! 🙂

Ingredients
1 cup butter, softened to room temperature
1 cup sugar
1 egg
2 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
120-150 Hershey’s Special Dark Kisses (2 bags) *
1 bag (10 ounces) Ghirardelli melting wafers
120-150 semi-sweet chocolate chips**

You will also need: 1-inch round cookie cutter and a plastic bottle with a small tip for assembly

Directions
In the mixing bowl of your stand mixer using the paddle attachment, cream together butter, sugar and egg until light and fluffy. Add in vanilla. Finally, mix in the flour, baking powder and salt until smooth and well combined. Chill in refrigerator 2-3 hours or until firm enough to be rolled.

Preheat over to 400F. Prepare cookie sheets with silpat or parchment paper.

Roll out half of the dough on a well-floured surface to 1/3-inch thickness (be careful to get the surface even, otherwise you will have oddly-browned cookies. Also, do not roll the dough to thin, otherwise you will have hard cookies when they come out of the oven). Cut out 1-inch round cookies. Bake 9-11 minutes or

until golden brown at the edges. Cool on wire rack.

To assemble, divide the chocolate chip, start by unwrapping the Kisses. Melt the melting wafers in the microwave or double boiler, then into the small squeeze bottle (or you can use a food-safe mini-paintbrush). Put a dab of chocolate on the underside of each cookie and attach the Kiss to the cookie. Let set /

harden. Once all are set, repeat with a chocolate chip (as the acorn “stem”) on the other side. Let set / harden again.

*I don’t know that all bags of Hershey’s Kisses have 60 pieces in them, but the 2 bags that I bought did. The dough actually makes about 150 cookies, so you will either have some left over, or you need to buy a third bag. You can also use plain, almond or caramel-filled Kisses for this recipe.

** You will need an equal number of chocolate chips to Kisses as these are the “stems” of the acorns
