Cardamom Carrot Cake Oatmeal Nut Cookies

Switching gears…. Easter is really early this year. Or at least it feels earlier than normal. I don’t recall it usually being this close to St. Patrick’s Day. At any rate, as with so many holidays, I feel the need to make something. As if I ever need an excuse, right? So this year’s Easter season is starting off with these Cardamom Carrot Cake Oatmeal Nut Cookies. They might be healthy, if it weren’t for the 3 sticks of butter and the almond candies. They are delicious and the nests actually turned out quite cute.

Bacon Caramelized Onion + Cheese Hand Pies

Sticking to the “mildly-Irish” Or “Irish-inspired” theme, here are some more hand pies, I do seem to be making a lot of these currently. They freeze really well and so I always have a lunch on hand. Definitely seek out the right kind of bacon, if you can. Avoid using streaky bacon, aka American breakfast bacon as the recipe will be either too greasy or too crunchy. If you can’t find Irish or British-style bacon, I’d go for Canadian bacon (like the kind in eggs benedict.

Colcannon Cakes

If you follow this site, you know that I seem to make a variation of Colcannon (Irish mashed potatoes) most St. Patrick’s Day — varying the potatoes (sometimes sweet potatoes) and the greens (cabbage, kale, even spinach), but this year, I stuck with transitional russett potatoes and cabbage, but make “cakes”, sort of like potato pancakes. Fried up, they are a great side dish to Irish-style sausages, or even for breakfast with bacon and eggs. Very filling!

3-Cheese Manicotti in Creamed Spinach Sauce

It’s not much of a secret that two of my favorite foods are cheese and …. spinach. Yes, spinach. That statement is almost as ridiculous as stating that I love (gasp!) brussels sprouts (which I do), but spinach is something that I could eat every day, every meal. Anything that combines spinach AND cheese is high of the list of favorites, which this does. As we get close to the end of cheese week in the ingredient game, I present this amazing 3-Cheese Manicotti in Creamed Spinach Sauce. It’s vegetarian. It’s filling. It’s delicious and I will be making it over and over again.

Oven-Baked Caramelized Onion Mac + Cheese

Mac & Cheese is one of those guilty pleasures because all those carbs and cheese are a bit much, but I did make this lovely Oven-Baked Caramelized Onion Mac + Cheese for dinner last night. The caramelized onions add a huge depth of flavor. Bold, creamy Cabot Seriously Sharp Cheddar is my favorite.
