How to make Hollandaise

Hollandaise. That lovely creamy buttery addition used to perfect Eggs Benedict, place over white fish or summer veggies. It is pure magic if done correctly, and can be a disastrous mess if it splits on you. This is my technique for making the magic.

And why am I showing you a picture of hollandaise with asparagus, a fried duck egg and serrano ham? Well, in the month of May, Germans are absolutely crazy about their asparagus (the white kind, though white is awful in my parts of the world, as it is old, woody and generally horrible; this lovely green stuff is from the local farmers market and was harvested about 36 hours ago). Holladaise is wonderful with this dish.

“BLT” Deviled Eggs

Part of the Easter Tradition in my world means coloring of hard boiled eggs. I love this silly activity and it’s something that I do with my mom every year. This is all great… and hard boiled eggs are good, but somehow every year we go a little overboard and after a day, I am usually kind of sick of boring old hard boiled eggs. What to do? Well, you could make egg salad or in this case, deviled eggs. I added bacon — just because bacon is good — and served with lettuce and tomatoes to make it “BLT-like”.

Carrot Cake Cheesecake

We’ll be moving on from the Easter Theme here shortly, but I thought that I would post one more Carrot Cake idea: This is Carrot Cake Cheesecake, carrot cake on the bottom, light and flavorful cheesecake on the top, lots of pecans in both. Lovely dessert for this Easter Sunday.

Carrot Cake with Almond Cream and Flowers

Here is my present to the Easter Bunny: A spectacularly delicious Carrot Cake with Almond Cream and cute little flowers made from sliced almonds and candy covered chocolate eggs (you could use M&Ms too. It’s really moist, very carrot-y, not too sweet and very flavorful. Came out great and I am actually really pleased. The photos aren’t so great, because I had to take them early in the morning. The cake was a present for a friend and I needed to deliver it early this morning before prime “photography time”. 🙂
