I seem to inadvertently be on a focaccia kick. This one has basil and garlic scapes incorporated, which are prevalent now at the local farmers markets… and my parents’ garden. Tastes super-fresh and it’s going to be a great appetizer before dinner. Yummy. Yummy.

Originally, I was going to call this “Sprinkles and Twist” Focaccia, as I had found some mini mini cherry tomatoes that are marketed as “Sprinkles” and when I had decorated the top of the focaccia with them, it was sort of a twisty pattern. Once baked, however, the “twist” part wasn’t as evident, so I am just going with Sprinkles Tomato + Garlic Focaccia. Lots of garlic, lots of both sun dried and cherry tomatoes. Basil from the garden. Perfect snack and accompaniment to Italian Food. Yummy.
The weekly sourdough! Another “new-to-me” bread (though I had made it as a yeasted bread before): Sourdough Marathon Bread. Why is it called Marathon Bread? Well, other than it being chock full of good for you stuff, thus, likely a good way to carb-load for a marathon, I don’t have a good, specific answer. It does have grated carrots and finely chopped dried fruit (I used dried apricots but you can use anything that you like), plus sunflower and pumpkin seeds. Healthy, yummy, great as a breakfast bread and keeps you going all day with sustenance. I’ll definitely make it again (but with raisins or cranberries, I think)
This week, in my ingredient challenge game, we’re doing things with peppers and chilis and I remembered that I had a whole lot of Thai Bird Chilis dried from last summer, so I decided to make some chili oil. It’s pretty hot, so definitely designed as a finishing oil. It’s got a bit of sesame seeds and sesame oil in it as well. Spicy, but not blow your head off spicy!
Quick and easy lunch — and low carb, keto-friendly — of Caesar Tomato Tuna Melts. Just not terribly easy to photograph, but they tasted yummy. I could have served them with lettuce as more of a sandwich, but all out of lettuce. I used provolone as the cheese but cheddar or swiss would go nicely as well. Pantry/fridge friendly ingredients too.
