Lemon Explosion Cookies

Sometimes, I like to see just how much flavor that I can squeeze into a recipe and I think that I may have done the maximum with these Lemon Explosion Cookies. In these crispy chip drop cookies we have the world famous Kind Arthur Baking lemon chips, zest from a couple of lemons, lemon extract and just to top it all off, lemon sugar (also from King Arthur). There is lemon on lemon on lemon and boy, are they good. Cookies that define summer sun!

Cinnamon Raisin Squirrely Bread

I know that I am going to step into the land of controversy with this week’s bread. There are camps on both sides, with strong, heartfelt opinions. Very few foods elicit such strong opinions (maybe Brussels Sprouts) as much as this: raisins in cinnamon swirl bread (well, raisins in anything, really). I love raisin, and as such, yes, this Cinnamon Raisin Squirrely Bread does indeed have raisins in it. Lots of them, in fact. Don’t like raisins, leave ’em out. No harm done. 🙂

PS: auto-spell check “corrected” swirl to squirrel so I went with Squirrely Bread instead of Swirly Bread. Seemed funny enough.

Tropical Pineapple Coconut Crumble Bars

I’ve had a song stuck in my head for a day now. Do you like Piña Coladas? Getting caught in the rain…. Yup, all because of these here Pineapple Coconut Crumble Bars, I have been humming those two lines of The Piña Colada Song (mainly because I only know those two lines 🙂 ). It turned unexpectedly tropical this weekend in Greater Boston, so it was more or less appropriate eh?

Orange and Hazelnut Sweet Focaccia

And here is something different: have you ever tried *sweet* Focaccia? Normally it’s savory, with rosemary or garlic or olives or just as a rustic accompaniment to Italian food, but I decided to make some with honey, oranges and hazelnuts. Wow! Simply phenomenal. I could see this along side a salad for brunch or even as a breakfast bread. It’s bursting with flavor, light, sweet and delicious. And it was another excuse to experiment with my sourdough.

Strawberry Kiss Cookies

You know me, I am the queen of finding unique ingredients for my baking and this week is no different. I found limited edition Strawberry Ice Cream Hershey’s Kisses, so I though that I would make these Strawberry Kiss Cookies. How did I make the sugar cookies pink too? Nestle Strawberry Quik Milk Syrup. Clever, eh? They are very pink, very strawberry-ish and quite yummy with a glass of milk!
