Steak Pie

Tonight is Burns Supper Night. I of course, did not remember this until this morning and the chances of procuring haggis at this late time (in the US, where finding it even with some advanced planning is a bit of a pain in the neck) so I had to go with making a Steak Pie. Not ideal of course, but better than nothing. Full up on multiple bottles of whisky though.

Chicken Fricassée with Spring Vegetables

Chicken stews for me are often an autumn or winter meal; nice and hearty to take off the chill. While sometime you need that in the spring too, this one is filled with fresh seasonal green veggies: leeks, peas and pea pods and asparagus, in addition to the chicken and mushroom. Definitely filling and this recipe will feed an army worth of people, so make sure you use a nice big pot!

Harvest Beef Chili, Peppers, Beans and Corn

Working on the “restock the freezer” project after a recent complete meltdown, and decide to make a big pot of chili. Turns out, it was the best pot of chili that I have ever made. Just the right amount of heat. Lovely flavor. Added in frozen corn on a whim and it really worked. Yum.
