Here are some quick and easy cookies that fill that peanut craving and are pretty darn healthy as they are mostly honey sweetened, with just a touch of sugar. I made these mostly because I had leftover Planter’s Honey Roasted Peanuts (yeah, I know, how does one have “leftover peanuts”, but I wanted to finish up a jar to make room in the pantry. Turned out nice with a balance of sweet and salty.
Peanutbutter
If you like peanuts, these are the cookies for you. Actually, if you *love* peanuts, that would be even better because these are loaded with peanut butter, raosted peanuts and peanut butter chips … in addition to chocolate chips and an actually good for you ingredient of oatmeal. Well, I guess peanuts are good for you too. I’m not sure how I could have added more peanuts to this really. Any ideas for my next try?
I guess technically I should call these “Chocolate Peanut Butter Sandwich Cookies” as not to upset the Nabisco Corporation, but you know … they are homemade oreos (wink wink). Anyway, I’ve had the Oreo Jingle going through my head for some inexplicable reason for a week now. Strange how the brain works, eh? So, I was enticed to make these here peanut butter versions of the classic oreo. Using the Hershey’s Special Dark cocoa makes them even more oreo-like (even though I guess I normally wouldn’t use Hershey’s cocoa powder for baking). At any rate, great for packing in a lunch box for the kiddos towards the end of the school year or for camp this summer. Make all the other kids jealous.

Second peanut butter recipe in as many weeks, which is really unusual for me, as I am not really a PB fan. Well, ok, not a peanut butter on bread with jam (or anything else for that matter) fan, but once you pair it with chocolate … well, I am all over that, which is why I like this recipe. Super yummy. It is, however, really rich, so maybe just eat one piece at a time. OK, maybe two.
Been a few weeks since I made cookies. Probably because I spent the entire month of November making cookies — for 115 hours! — so that I didn’t want to even see any for a while. But we’re back and these are a cute little surprise for January. Buttons! And peanut butter! I like peanut butter, but don’ *love* peanut butter (that is likely the German in me — not a big thing in Germany) but the peanut butter is more like frosting in this case so lighter and fluffier. Sort of like an oreo, only a million times better.
