I went apple picking yesterday and of course that means it is the season for Apple Cider Donuts, so I was inspired to make a slightly healthier version of said doughnut in muffin form (so baked not fried). They do have that special cider donut taste though, so overall a big success. Warning though, if you make this recipe, if feeds a crowd — it’s enough batter for 18 standard sized muffins, so come hungry or be able to pass them out to friends and neighbors.

Sunday Morning Breakfast: Seriously the easiest muffins ever. Bananas, pecans, a bit of oatmeal crumble. On the breakfast table, all warm and delightful, in under an hour (under 45 minutes if you hurry a bit).
So, in reference to the photo that looks like claws are coming to steal the muffins: my parents have this decorative metal lobster hanging on the porch railing, with the claws just above railing level. I thought that it was funny in a halloween like way, to have the clws coming up from the deal to steal my Banana Pecan Crunch Muffins. Nom. Happy Halloween. 🙂
I’ve got visitors staying with me tonight and I thought I would be all “Bed and Breakfast-y” and make some muffins in case anyone is hungry in the morning. They were a bit of a flop, mainly because I think that my baking powder is getting old, so not a lot of rise to them — remember to buy fresh leavers, folks! They do taste great though, so nothing wrong with the recipe, just a chemical malfunction on my software.
