Completely out of character for my baking and cooking style, but staying on the Halloween and ghoulish eyeball theme, here we have some absolutely delicious Spicy Hot Honey Almond Buckeyes, all decked out for the holiday. Despite being technicolor and ghoulish, they taste really cool — kicked up almond butter with cayenne and honey. And besides, freaking the kids out by biting into an eyeball has to be fun, no?

It’s almost Halloween! I am not usually one of those “make all sorts of crazy treats” type of person (mainly because I don’t do a whole lot for Halloween, and you aren’t supposed to give cookies/homemade stuff to strangers). At any rate, this year, we are doing a bit of a thing for work, and I am also using these upcoming treats for giveaways, so here we go. First up, Cinnamon Red Velvet Ghoulie Eye Cookies! It’s my standard crinkle cookie recipe with chocolate, cinnamon and sugar eyeballs. I added the food coloring for extra creepiness (note that you can also buy “bloodshot” eyeball candies). These are surprisingly delicious, especially is you warm them for 10 seconds in the microwave. Nice and gooey then — and who doesn’t love gooey ghoulie eyeballs!
I don’t go crazy-overboard with the 4th of July / Independence Day Treats, but I thought that I should do *something*, and this is frankly the most Americana thing that I could think of …. breakfast cereal, marshmallows, peanut butter and red-white-and-blue sprinkles. Voila, festive Rice Krispies Treats, just in the for the holiday.
Ending my Easter baking this year with a little Cardamom Carrot Cake with Pecans and Zante Currants. I love cardamom — my favorite spice — and a nice, healthy carrot cake to balance out all the chocolate Easter Bunnies. I didn’t make the sugar-decorations just bought them; being lazy), but they are a cute addition, don’t you think?
I’m going to call these “adult” rice krispies squares…. yes, indeed, I did actually put bourbon in these, and while I don’t think that you could get drunk off them, they are definitely addictive and delicious. In case the “Easter Bunny” is having a bad day, these might make it just a little bit better. The “Peep-influences” Sprinkles just add to the equation.
