Wild Garlic Artisan Sourdough Loaf (“Bärlauchbrot”)

It’s Wild Garlic (aka Ramps, aka Ransom, aka deliciousness to forage) season, and while I found some “fresh” (ok, fresh at the farmer’s market this time; I haven’t had my usual opportunities to walk in the woods), I also made quite a bit of pesto last year already that I then froze to use this year. I love ramps (German: Bärlauch) and because it has such as short season, it feels like a treat to manage to have made this bread. Great for dipping in some good olive oil and salt, it also made a mighty fine panini last night.

Don’t have Wild Garlic pesto? This recipe will work best as well with basil and garlic pesto or garlic scape pesto.

Rosemary Sea Salt Sourdough Artisan Bread

This recipe, in yeasted form vs sourdough, is by far the most viewed recipe on this here CSPS site. I’m not sure why exactly — the referrers are all from Pinterest, so I am guessing it’s just been shared to members who have large followings, and then saved a lot. So I decided to create a sourdough version of it as well, and I personally think that it is even better than the yeast version. Got a bit of tang, very rosemary, just the right amount of sea salt. It’s going to make some delicious paninis for dinner.

Parmesan Almond and Rosemary Cocktail Cookies

I’ve named these little gems cookies, but they are savory of course (with just a hint of sweetness) with the intent to snack on with a nice glass of white wine (or red, but I think that a nice white would be best with these). Also, it’s nice because you can actually make a couple logs, stash them in the freezer and bake them up as you see fit. The recipe makes about 100 little (1 1/2 inch) cookies, which is just enough for a handful for 4-6 people … great for a small gathering.

Cheesy Garlic and Herb Pull Apart Bread

Let’s talk about garlic bread. It’s a total summer time thing for me and I almost never make it in the winter, even if it does pair nicely with Italian dishes like the traditional “Spaghetti and Meatballs”. But now that it is summer, it’s time to work on perfecting these loaves of yumminess. This time, I decided to not take a loaf from the store and slather it with garlic and herb butter, but I made the bread too. And I made the “pull apart” / “crazy bread” style bread that I have become so fond of. Added a lot of parm and voila. Yumminess! Best part is that it virtually falls apart into slices when removed from the loaf pan, so no need for a knife.

Sweet and Salty Ramp Butter, with Honey and Sea Salt

Things to do with Ramps, Part 3: Make butter. And not just any butter … butter that you will be looking for any and every excuse to use. It’s sort of like garlic herb butter, but lots and lots better, very mild and incredibly good. I just made four rolls of this and have stashed them in the freezer to use all summer long (if I have enough will power to make it last that long). Try it, you soooo won’t be disappointed!
