Sugar Bee Honey Whiskey Apple Pie

It’s March 14, commonly known as Pi(e) Day here in the US, so I baked a pie…. just a standard old lattice top apple pie, but it is delicious. I found this new variety of apples called “Sugar Bee”, and they turned out to be a great baking apple; I definitely recommend seeking them out.

Apple Walnut Upside Down Bundt Cake

Doing a little more experimenting with “upside down” desserts, this time plain old apples, but the batter also has toasted walnuts for a bit more flavor, and made in a bundt pan. I was actually afraid that this one wouldn’t release as well, and that I might have a disaster on my hands, but it inverted and released quite nicely and it tuned out ok. The cake itself isn’t as moist as I would like though, so might have to serve with some whipped cream. Just a little Sunday afternoon snack at coffee time.

Mango Mania Marmalade

Sunshine in a jar! Mangoes were on sale at Whole Foods this week, and when balls of sunshine are available, I bought some and ended up making this jam. Super quick to make and should extend the life of these lovely fruits for a bit. Lovely on toast but also with yogurt and granola. Or just plain by the spoonful.

Lemon Sandwich Cookies with Meyer Lemon Curd

Meyer Lemons make me happy. They are like little balls of sunshine, so this recipe is actually a “two-fer”…. it’s a recipe for Meyer Lemon Curb and a recipe for Lemon Sugar Sandwich Cookies. You could wimp out, and I won’t hold it against you, and just buy and use the store bough lemon curd. That’s fine too. But if you are so inclined, making your own is delish. And it adds sunshine to any February!

Winter Citrus Upside Down Cake

acidity and sometimes the bitterness of even the sweetest fruit — not something that you really notice until it is on your plate for first tasting. Nevertheless, happy with the concept of the upside down cake and will likely do something else on the topic soon. If nothing else, it looks very vibrant!
