Brioche French Toast with Orange Cardamom Compound Butter

Nothing like starting off a Monday morning with a hearty breakfast. Trader Joes sells this great sliced brioche bread which makes the absolute perfect French Toast so I thought that I would indulge. Light, fluffy with just the right amount of sweetness. And you know what, French Toast doesn’t actually take that long as I managed to make it before my early doors this morning. Might need to make a habit of this to start the week.

Deviled Eggs Florentine, with Bacon

I should do my best Dr. Seuss impression call these Green Eggs and Ham Deviled Eggs, except they are with bacon, and not much rhymes with bacon, so I’ll just have to stick to boring old Develied Eggs Florentine. Eggs, Spinach and Bacon. Quite yummy and used up the last of my colored eggs from Easter. On to other adventures!

Smoked Salmon and Chives Deviled Eggs

You might be an overly poshy food blogger when, whilst making deviled eggs during a global pandemic, you think “oooh, I may have stashed smoked salmon in the freezer for an emergency!”

For the record, there is no such thing as a smoked salmon emergency. Ever. No matter how delish it is.

But, the deviled eggs are yummy. And my chives survived the winter.

Make-Ahead Veggie and Sausage Breakfast Casserole

I have far too many eggs in the house. Don’t ask, it’s a long story, but there are dozens of eggs taking up room in my fridge. Conveniently, there were also some peppers, some leftover cheddar cheese and, in the freezer, some hot Italian sausage. So I put together this concoction last night and baked it up as breakfast today. Feeds a crowd. Also, you can use a biscuit cutter, cut rounds and toast yourself an English Muffin, and you can make a kick-ass breakfast sandwich.
