I thought I’d make a couple of things for St. Patrick’s Day. And sort of like most holidays, I am just making these because it’s a sweet treat and I felt like it, not because they are particularly Irish or Irish-American for that matter. These “Irish Cream “Faux-reos” Sandwich Cookies are Oreo-style Chocolate Sandwich Cookies with Bailey’s Filling, and how can you really go wrong with that.

As every year, here is the Valentine’s Day Cookie Collection. I might have gone a little overboard this year, with 5 varieties, but I had the time and energy for once so here we go. Happy Valentine’s Day!
The varieties are:
Oreo-style Sandwich Cookies
Raspberry Almond Linzer Cookies
Red Velvet Non-Pareil Cookies
Espresso Chocolate M&M Cookies and
Lemon-Hibiscus Swirl Cookies
The other day, I had the opportunity to try Big Spoon Roaster’s Tigerwalk Espresso Nut Butter (almonds and hazelnuts) and I was blown away. Really really delicious, and the perfect thing for making Gluten Free nutbutter cookies like these. They are GF and dairy free (they do have eggs, but no butter), and are simply delicious. They come together in a snap (no mixer needed) and this recipe can be halved as it makes quite a lot of cookies.
Meyer Lemons make me happy. They are like little balls of sunshine, so this recipe is actually a “two-fer”…. it’s a recipe for Meyer Lemon Curb and a recipe for Lemon Sugar Sandwich Cookies. You could wimp out, and I won’t hold it against you, and just buy and use the store bough lemon curd. That’s fine too. But if you are so inclined, making your own is delish. And it adds sunshine to any February!
Thought I’d start off my “cookie year” here in January with something at least semi-healthy with oatmeal cookies. Of course, there is lots of butter, toffee bits, jammie bits and chocolate chips, so that takes away most anything healthy about these, but they are delicious, so there is that. Thin, very crisp, with a bit of a crunch. If you like “thin and crispy” these are definitely for you.
