Meyer Lemon Macadamia Crumble Bars

Still on my Meyer Lemon kick… while they are available, I will eat them! So I thought I would use some of the curd that I made last weekend and make some crumble bars (aka shortbread bars). And what pairs nicely with the tropical flavors of Meyer Lemons — why Macadamia Nuts! While these were a bit annoying to cut (should have chopped the nuts finer) they taste amazing!

Cardamom Lingonberry Thumbprint Cookies

Sort of Swedish Cookies. Sort of. I’m guessing that these are not *really* Swedish, because when I was looking for cookie recipes, I didn’t find these on the Internets, but the flavors are distinctly Swedish in my mind, so I went with it anyway. Cardamom always reminds me of a family friend from Sweden, who actually was the one who gave me the spatula that is pictured in the photos. She gave it to me at Christmas past so I thought it apt that I bake something that would match. Besides, I had some Lingonberry jam from IKEA. 🙂

Coconut Chocolate Chip Florentines

OK, so these cookies aren’t *really* florentines — those super thin and crispy cookies that are almost like lace, but these are oh so good nevertheless. Sort of a combination of a regular chocolate chip cookie and a florentine. And super coconut-y as well. These may just become one of my standard “go to” cookie as well as they are really fool proof to make.

Chocolate Snowcap Cookies

It’s definitely winter here in New England now, and while Boston was spared the brunt of the Nor’easter that just moved through, Maine got hit with varying amounts from 10-20 inches. I like winter on the whole, so I’m not complaining. When I saw these non-pareil “snow cap” chips at Target the other day, I thought that they would make some nice cookies, even though I think most people are still high from the sugar rush that is / was Christmas. Nevertheless, here we are.

Ginger Maple Chocolate Chip Cookies

Here is another “Autumn Cookie” that could actually double as a Christmas Cookie. I seem to be experimenting a lot with these sorts lately. Ginger and cinnamon make it at least sort of like a Christmas Cookie, though I do associate maple more with the fall (don’t really know why though). At any rate, really simple and homey. Do beware that they spread a lot because of the maple syrup.
