Friday! And that means cocktails again! You’d think that I only make cocktail *on* Fridays, but that isn’t true. I only actually *perfect* cocktails on Friday. It usually takes a few tries to get them right. And this one is delicious. Might have to have a couple more this evening.

Spiked Peach Honey Iced Tea

Another summertime cocktail. As we go through the summer, you see all the lovely things at the Farmer’s Market and local peaches are ripe. I bought a few, but then didn’t get around to eating them, so they were almost too soft for anything besides pie or making smoothies. So I made a puree, and thus this iced tea. Note that with the amount of puree and honey simple syrup that this makes, it would be just enough to make an entire pitcher (I only made a glass-full for the photo — and because I couldn’t exactly drink an entire pitcher or spiked iced tea myself.

Black + Red Currant Mojito

It’s Friday. I have some berries left. I want a drink. This is what I came up with … a mojito with cassis (not my own homemade, though that is in progress) and some red currants thron in. Really summery and refreshing. Might have to make a couple more [grin].

Marrakesh Mojitos

Cocktails on a Friday! And beautiful weather to boot! This is a bit of a riff on both mint tea (which I love any time of the year, but I find very refreshing cold in the summertime … err, I guess it isn’t summer yet) and a mojito (yum!), plus the addition of my favorite spice, cardamom. Inspired by The Bonjon Gourmet. Drink up and cheers!
