It’s May first and in many places, this is a celebratory day. Not much going on here in Camberville, except the sun is shining and I am in a good mood and so I tried the channel that into my treats that I baked this morning. Back to some of my “more unusual” flavor combinations: Rhubarb Rosehip Shortbread Bars!A little tart, a little sweet, overall delicious and definitely not something that you would have every day. Not everyone has had rosehips, but they are floral and fruity tasting; combine that with the spring-rhubarb flavor and you have a winner!

Oatmeal Nutella Bars

So, I guess I had one more Nutella-based recipe in me, as a carry over from World Nutella Bar, which was yesterday. These Oatmeal Nutella Bar are a riff on my usual crumble bars, only with two doses of Nutella and a bunch of oatmeal, they are more like crunchy granola bars. Maybe even healthy enough for breakfast, certainly delicious enough for a snack or pick-me-up. Quick and easy to make if you want to be making some yourself.

Caramel Pear Cardamom Honey Bars

I think Pears are woefully underrated. Apple Pies, peach cobbler, but less often do you find pears in the dessert spectrum. Well, the other day, I came across some Caramel Cardamom Honey Spread and thought it matched well with pears, so I decided to make some of my usual crumble bars. Success! These are great and I will definitely make them again.

Rosehip & Almond Shortbread Bars

And now for something a little different …. Have you ever eaten roses? Yes, as in the flower that one gives on Valentine’s Day? The flowers turn to fruit (rosehips) which are edible. I commonly know rosehips from tea, but recently while I was in Germany, I found rosehip jam, and of course was curious. It’s a floral flavor for sure, though I am not sure I could identify the taste as ‘roses’. At any rate, I decided to make some of my crumble shortbread bars with the jam and some almonds and they turned out quite nice. I could see them being eaten with tea or coffee in the afternoon.

Raspberry Almond Crumble Coffee Cake

As promised, I am baking along to my own bake-a-long, so here is my first treat: Raspberry Almond Crumble Coffee Cake. They are crumble *bars* only in a round shape, so sort of coffee cake like.
