As is usual in later June, usually the first weekend after the summer solstice, I went PYO Strawberry picking today. It wasn’t great weather, and I picked less berries that usual because they seemed smaller, there were less of them, and the impending rain. As usual, I have plans for the berries, so stay tuned. It seems that every where you go, you’re overrun with rhubarb this time of year around here. Apparently it’s been a bumper crop and people are practically giving it away. So here is a new recipe to use some of your harvest. I know that the berry accompaniment tends to be strawberries, but I thought that I would change it up with raspberries. And ginger. Love ginger.
Crumble bars are definitely my “go to” dessert (sort of like variations on the blueberry muffin are my go to breakfast item). I think that there must be at least a dozen crumble bar recipes on this site at this point. They are just so eary and the variations are endless. Sometimes I add nuts. Sometimes I add oatmeal. There is always fruit. They are always yummy.
The first time that I heard about apple butter, I was very confused. It’s a bit of a misnomer of course — there is no daily in this butter! In essence, it is just very concentrated apple sauce. Sort of a jam. Not even close to being a jelly. The nice thing: it works great as an addition to pies and makes a great filling for these bars. You can of course make it yourself, but it seems to be readily available in the shops these days too.
As we march from Spring through early Summer to now the “dog days” of Summer, we move more towards stone fruits — apricots, peaches, plums and the like — which make great jam which is also the important part of my super easy to make crumble bars. There must be about 5 different versions here on the site. They are great to add to lunches or to pack into picnics!
