Cranberry Apple Slab Pie “to feed a crowd”

It’s getting to be that season where you might have to “feed a crowd”. You know, those times when there might need to be enough food for a dozen, or two dozen people. Enter this pie. It’s designed to feed a crowd, between 20-24 people. It’s a pretty big canvas too, so you can easily work on your lattice skills or, as I did, play with some cookie cutters to make a cute little pattern of flowers. Either way, it’s yummy and will be sure to be enough for the whole gang.

Cauliflower Steaks with Pistachios and Browned Butter

Cauliflower is really underrated, in my opinion. A lot of people think it is bland or flavorless. The white color doesn’t exactly do it any favors either. But you can really use it as anything from a base to a soup to “rice” to in this case, a “steak”. It’s really hearty, flavorful with the nutty brown butter and can truly be used as a substitute for a real steak. I’d serve this to a vegetarian friend, wouldn’t you?

“Creepy Oreos” :
Chocolate Sandwich Cookies, Vanilla Filling

I don’t do a lot of baking for Halloween. I *like* Halloween, and if I had more occasion to do so, I’d come up with some creepy ideas for sweet snacks, but as one can’t hand out homemade cookies to trick-or-treaters, I usually just limit my baking to one thing. This year, it’s these sandwich cookies. I used one of those imprinting rolling pins which didn’t work particularly well, but c’est la vie. Next time I will skip the baking powder in the dough. They taste great though.

PS: I think that the skulls look a little like Star Wars Storm Troopers, but I might just be imagining things.

Dinner on the Menu for tonight: Beef and Mini Mushroom Stew with roasted veggie and ‘tatoes. Easy to make (mostly the oven does the work for you), filling and enough to feed a small army. The sauce of the stew is positively luscious.

Cranberry Custard Apple Tart

Yup, it’s fall. I guess it’s officially been autumn for a few weeks, but the air is finally cooler. Which means what? Apple pies! Custard-style apple pies are my favorite. They are not so sweet, and have a creamier (not no sticky) flavor. This time I added some cranberry sauce (and yes, I was lazy and just bought store-bought — home made would have been so much better, but I still need to wait a few weeks for cranberries!) which added a tart little punch.
