Pea Pesto Parpadelle

Pea Pesto Parpadelle … if nothing else, it’s kinda of funny to say. And turns out, it’s yummy, summery and really quick to make — like this took no more that 20 minutes from fridge and pantry to plate. You can make this with frozen peas any time of year, but I happen to find fresh ones at the market (for those precious few weeks in the summer).

Mediterranean Baked Cod

So all of my “more unique” (or “heirloom”) tomatoes happen to ripen at the same time, so I found myself with an overload of tomatoes today. Combine that with a zucchini from the last time I was at my parents and a whole lot of basil, I had half a meal right there. Add some onions (shallots), garlic and cod fillets, and there is a meal and then some. While you could just eat it without anything else, or with some crusty bread, I decided to make some pasta. And there we go.

Lemon-Dill Salmon Pasta Salad

Ahh, summertime when veggies are fresh and you really don’t want to eat hot food anyway, right? Right. So I made this lovely Lemon-Dill Salmon Pasta Salad with Cucumbers and Peas for lunch. Made it up on the fly as I had salmon for dinner last night. In the end, it turned out to be more “northern” influenced… these flavours remind me of Scandinavia, though I doubt this would be authentically Swedish or Norwegian. At any rate, it *is* delicious. I have plenty of leftovers so it may turn into dinner as well as lunch.
