Definitely getting to be autumn here in New England. And given that I went apple picking on the weekend, I was inspired to make something “apple-ish” today. These Oatmeal cookies include King Arthur Baking apple cinnamon jammie bits and toffee chips too and are a delightful little “florentine-style” (i.e. thin and crispy) oatmeal cookie. Perfect with tea in the afternoon and *may* even be healthy enough to sneak in as a breakfast cookie. Yummy. Welcome autumn!
Cookies
These were so good, I had to make them twice. 🙂 Yep, that’s right. I sampled one from the first batch and before I knew it, I had eaten half my giveaway. Whoopsie! At least I had a lot of Blueberry Jam hanging around. It is blueberry season and if you can get the good ones from Maine (or at very minimum, a jar of Stonewall Kitchen stuff), definitely go with the “Wild blueberry” variety. You won’t be sorry!
Red Currants are one of the best things in life! I love their sweet and tart bites of juiciness. The season is incredibly short though, and to prolong the season, the one of the things that my family often does is make jelly. My mom made a whole bunch last week, and with some jelly, I made some Hazelnut Red Currant Linzer Cookies. Bite sized cookies with a great flavor!
I don’t go crazy-overboard with the 4th of July / Independence Day Treats, but I thought that I should do *something*, and this is frankly the most Americana thing that I could think of …. breakfast cereal, marshmallows, peanut butter and red-white-and-blue sprinkles. Voila, festive Rice Krispies Treats, just in the for the holiday.
