Meyer Lemons make me happy. They are like little balls of sunshine, so this recipe is actually a “two-fer”…. it’s a recipe for Meyer Lemon Curb and a recipe for Lemon Sugar Sandwich Cookies. You could wimp out, and I won’t hold it against you, and just buy and use the store bough lemon curd. That’s fine too. But if you are so inclined, making your own is delish. And it adds sunshine to any February!

It’s been one of those weeks (and one of those months! I hate January!) that chocolate wasn’t an option this weekend, and the best option was for these Salted Caramel Pretzel Pecan Brownie Bites. They are cute, delicious and definitely filled the chocolate “void’ for the weekend. I make my brownies from scratch (not out of the box), but in a pinch, you could also do this recipe with a box mix. A very straight forward and simple recipe.
Thought I’d start off my “cookie year” here in January with something at least semi-healthy with oatmeal cookies. Of course, there is lots of butter, toffee bits, jammie bits and chocolate chips, so that takes away most anything healthy about these, but they are delicious, so there is that. Thin, very crisp, with a bit of a crunch. If you like “thin and crispy” these are definitely for you.
You know me, bars are almost as popular in my world as cookies, whether it be shortbread crumble bars or brownies or in this case, blondies. Very delicious. Just the right amount of spice cut my the vanilla of the white chocolate chips. A great addition to a holiday cookie platter and ready in under and hour, start to finish. Yummy!
I’ve been meaning to make these Cocoa Krispies Bar Mummies for a couple of years now, but somehow Halloween has rolled around and either I’ve forgotten or I was already working on the Cookies and didn’t have time to run to the shops for the ingredients. But here we are: meltingly soft cocoa krispies bars (the trick is adding a bit of condensed milk) with white chocolate coating, cute little eyeballs.
