Blueberry Lemon Soufra

Something a little different today: a Blueberry Lemon Soufra. What is a soufra, you ask? It’s a Greek and Middle Eastern filo souffle pie. You fill the pie dish with buttered filo dough layers, folded or ruffled together, toast in the oven before pouring/ladling on custard. They can be savory (skip the sugar and vanilla in the custard) with spinach and feta or walnuts for example, or sweet as in this one with lemon and blueberries, or dates and walnuts, or any fruit or even chocolate chips. I made it for brunch (and truth be told, added some maple syrup over the top), but also would be a nice breakfast or lunch. Tastes best right out of the oven, and eaten the same day for sure.

Cardamom Nutmeg Spiced Bundt Cake

I love cardamom. It is by far, bar none, my favorite spice. Second to that is nutmeg, so if I have the opportunity to combine the two, I am all for it. AND I love bundt pans because you can make really cool looking cakes without frosting — and you all saw evidence of how untalented I am at frosting the other day. I bought myself this bundt pan for my birthday this week and really like the pattern. Just a sprinkling of powdered sugar and this Cardamom Nutmeg Spiced Bundt Cake really pops. Very straight forward recipe and extraordinarily pleased at the outcome.

Cocoa Krispies Mummy Bars

I’ve been meaning to make these Cocoa Krispies Bar Mummies for a couple of years now, but somehow Halloween has rolled around and either I’ve forgotten or I was already working on the Cookies and didn’t have time to run to the shops for the ingredients. But here we are: meltingly soft cocoa krispies bars (the trick is adding a bit of condensed milk) with white chocolate coating, cute little eyeballs.

Honey Cinnamon Sourdough Brioche Sweet Rolls

Alice in Wondoughland, my sourdough started, had gone into hiberation for a few weeks whilst I was in Germany, but she’s all thawed out and ready to rise again! First up: these super fluffy Honey Cinnamon Sourdough Brioche Sweet Rolls. Definitely something to have for breakfast, but not nearly as sweet or sugar-overload like a cinnamon bun (don’t get me wrong; I love those too, just in a different way. Great fresh out of the oven with a bit of butter.

Honey Crisp Apple Jam

Honey Crisp Apples are my favorite apples. Pink Ladies are a close second, but I do like Honey Crisps the best. The dilemma with that is that often Honey Crisp Apples are HUGE — I’ve seen them the size of grapefruit and that is not so much fun. My solution is that I go apple picking, like I did this past weekend, and seek out the really small ones. IMO opinion, they are better for pies and in this case, jam. The jam is partially made of unpasteurized, from-the-farm cider, which was also mostly honey crisps, so double the goodness!
