Low-Knead Cast-Iron Crisp-Top Dinner Rolls

Sometimes the things that should be so easy end up being so very very hard, comparatively. Like making crusty baguette-style dinner rolls (or sandwich rolls, or whatnot). I’ve experimented with various versions and finally — FINALLY — These might just be perfect. It’s another one of those very-little-knead (“no knead”) bake in cast-iron recipes. It takes a while — there is an overnight rise in the fridge involved — but these are really out of this world good. Definitely recommended. I am going to try whole wheat / multigrain versions of these as well, so stay tuned.

No-Knead Harvest Grains Super-Seed Bread

This is, hands down, my new favorite bread. It’s another one of those (almost) no knead, bake-in-a-dutch-oven kind and it turned out perfect. It uses a King Arthur Harvest Grains blend (can he found here; a one bag of these grains is enough for 8 or 9 loaves). It adds a delicious nuttiness. Simply wonderful. And it looks darn right pretty.

Rosemary Olive Boule, with Sundried Tomatoes

Here is another variation on my “no knead, bake in a Dutch oven” bread. This time, I decided to make a Rosemary (from my own garden) Olive and Sundried Tomato variation. Does Rosemary from my garden count as ‘from my garden’ so ok to use as this week’s Cook/Bake-a-long? Well, even if it doesn’t, boy, is this loaf delicious. I’ve just been dipping it in olive oil, but I’ll bet that it will make a pretty yummy grilled cheese sandwich too!

Savory Parmesan Herb Muffins

Here’s a cleaver little twist on your standard biscuit — it’s a muffin instead! I mean, it tastes just like your standard, flakey herb and parm biscuit — great with soup! — but “individually wrapped” like a muffin. Either way, tasty and a great accompaniment to soups or salads, or even for breakfast along side bacon and eggs. Best to use fresh herbs in this recipe, as the dried sort taste chalky!

Obatzda und Brezn

It’s a bank holiday weekend, the unofficial “start to summer” and we’re in a global pandemic, so Munich trips are off for the time being! Didn’t stop me from wanting to be in the biergarten and craving Bavarian Food. Alas, Brezn (pretzels) are harder to come by (make your own!) and so is Obatza, the cheese spread that you find almost everywhere there. Traditional accompaniments are radishes, chives, gherkins, sometimes cherry tomatoes or even some charcuterie. Ein gutn!
