Now that the Christmas Cookies are done, I’m focusing on making some other treats for Christmas. Up this time: Holiday Chocolate Peppermint Bark. “Bark” is such a strange term for this type of candy. Then again, so are “brittles”. Historically it comes from chocolate barks looking like yes, the bark of a tree. Peppermint and white chocolate really don’t, but I am going to go with it anyway. And no matter what it is called, it is delicious.
Ingredients
25 mini candy canes or hard peppermint candies
4 cups semi-sweet chocolate chips
1/2 teaspoon peppermint extract
3 cups white chocolate chips
Directions
Place the mini candy canes or hard peppermint candies in a zip top bag and use a rolling pin or meat mallet to crush them into small chunks. Transfer to a medium bowl.
In a medium metal or glass bowl set over a pot of lightly simmering moves, stir the peppermint extract into the semi-sweet chocolate chips. Pour onto a wax paper-lined baking sheet and spread evenly with a spatula. Chill in the fridge for 30 minutes. Repeat with the white chocolate chips (no extract though). Take
the pan out of the freezer and pour the melted white chocolate over the chocolate, spreading evenly with a spatula. Sprinkle the crushed mini candy canes over the white chocolate. Chill for an additional 4-5 hours.
Remove the bark from the freezer and break into pieces. Store at room temperature or in the fridge. Enjoy!
