Browned Butter Bourbon Pecan Chocolate Derby Bars

Tip of the hat — those famous hats! — for the Kentucky Derby! And because of this event, here is something as “Kentucky” that I could think of: Browned Butter Bourbon Pecan Chocolate Derby Bars. Browned Butter shortbread bottom, topped with a bourbon pecan brownie layer and caramel sauce. Very decadent and a true winner!

PS: Don’t mind the mint in the photo — the Kentucky Derby does always remind me of mint juleps, but there is no mint in the recipe; I just used it to dress up the photo a bit.

Sunny Sunflower Seed Sourdough Loaf

Here’s another little bread recipe: I realized that I had no bread in the house last night, and I am a “toast for breakfast kind of person”, though I am not an early breakfast eater. That means that this loaf making was perfect as I started my day baking and ended up having a few slices near mid-day. Great all-purpose bread, from breakfast to sandwiches.

Sourdough Grissini-style Bread Sticks, Mixed Flavors

These are addictive. Very addictive.

In my weekly adventures in Wondoughland, my sourdough starter this week produced these absolutely fantastic bread sticks, aka Grissini. I can’t stop eating them. Wrap them in prosciutto, add them to a charcuterie platter, use them as a crouton with soup or salad, or just dip them in some ranch dressing, they are crazy yummy no matter how you snack on them. I made 6 varieties, sesame seed, nigella seed, poppy seed, herbs de provence, pretzel salt and plain. These may become a staple at my place!

Caesar Tomato Tuna Melts

Quick and easy lunch — and low carb, keto-friendly — of Caesar Tomato Tuna Melts. Just not terribly easy to photograph, but they tasted yummy. I could have served them with lettuce as more of a sandwich, but all out of lettuce. I used provolone as the cheese but cheddar or swiss would go nicely as well. Pantry/fridge friendly ingredients too.

Squid Ink Spaghetti Puttanesca

I’m going to start out by saying that you certainly don’t need to make this recipe with squid ink pasta. I just happen to have some black spaghetti, so my Pasta Puttanesca (with Olives, capers, anchovies and lots of lots of garlic) ended up with that instead of regular. Turns out, tastes the same regardless of color. 🙂
