Rocky Road Cheerios Bars

Here is a nice and easy, no bake recipe that would thrill any child heading back to school, in their lunch box (do kids even have lunch boxes these days?): Rocky Road Cheerios Bars. Really easy to make (the trick is the freeze some of the mini-marshmallows and chocolate chips) and will last a couple of days if you don’t eat them all in one sitting. And even though it is a cheat to say “homemade” because you really just stirred them together, they are home made!

Ingredients
3 tablespoons butter
1 10.5 ounce bag + 2 cups miniature marshmallows, divided
1/4 cup unsweetened cocoa powder
1/2 cup almond butter
4 cups Cheerios
1 cup chopped almonds
1 cup semi-sweet chocolate chips

Directions
As a first step, place 2 cups of miniature marshmallows and 1 cup of chocolate chips in the freezer for a minimum of 2 hours, up to 24 hours. This will help prevent them from melting when you add them in at the end of the recipe.

Create a foil sling for your 9 x 13 baking dish. Spray liberally with baking spray.

Add the butter, the bag of marshmallows, and the cocoa powder to a large pot. Melt the butter and marshmallows over low heat. Once the marshmallows are completely melted, stir in the almond butter. Remove from the heat and stir in the Cheerios until they are evenly coated with the chocolate mixture. Stir in the almonds, frozen marshmallows, and frozen chocolate chips.

Spoon the rocky road cereal mixture into the prepared pan. Press into an even layer. Refrigerate for 30-60 minutes, or until firm. Cut into square bars.
