Lemon Cheesecake Pie with Blueberry Compote

So looping back to the last of the “Use up all those extra eggs!” dishes that I made last week, here is one more. It only uses 4 eggs, but that was (along with all the other stuff that I made) enough to use up the overload. This is a cross between cheesecake and pie, the best of both worlds, and in this case, topped with blueberry compote, although you could swap that out with other flavours too!

Spicy-Smokey Strawberry BBQ Sauce

One of the other things that I have made on my recent strawberry kick is this Spicy-Smokey Strawberry BBQ Sauce. I’ve made a similar Roasted Strawberry and Chipotle BBQ sauce before — this one is a little smokier and a little spicier. And these crazy ribs…. which are phenomenal (recipe is here). Obviously the BBQ sauce also works on wings, for pulled pork, brisket, etc. Yum!

Browned Butter Cran-Strawberry Crumble Bars with Toasted Pistachios

Between eggs and strawberries, I seem to be drowning in ingredients these days, so I decided to make more jam (subsequent post coming up) and then with “extra” jam (I ran out of jars), I decided to make these crumble bars. They are definitely my go to recipe. This time, I browned the butter first (definitely a great idea) and then added pistachios as well. Perfect for a 4th of July picnic!

Make-Ahead Veggie and Sausage Breakfast Casserole

I have far too many eggs in the house. Don’t ask, it’s a long story, but there are dozens of eggs taking up room in my fridge. Conveniently, there were also some peppers, some leftover cheddar cheese and, in the freezer, some hot Italian sausage. So I put together this concoction last night and baked it up as breakfast today. Feeds a crowd. Also, you can use a biscuit cutter, cut rounds and toast yourself an English Muffin, and you can make a kick-ass breakfast sandwich.
