My mum has an expression for “leftovers” that loosely translated from German as “sideways through the refrigerator”. I was almost going to call these “Sideways Through the Pantry” Bars, because I am using up a whole lot of odds and ends: chocolate chips, mini-marshmallows, nuts, Chex cereal. They did end up sort of “Rocky Road”-ish with the chocolate and marshmallows though, so I went with that instead. Definitely gives these time to set up… For some reason, the chocolate took forever to harden!
Ingredients
1 12-ounce bag semi-sweet chocolate chips
2 tablespoons vegetable shortening
2 tablespoons light corn syrup
3 cups mini marshmallows
3 cup Honey Nut Chex cereal
1 1/2 cups pecan pieces
1 cup caramel bits
2 cups shredded coconut, toasted
You will also need (though it isn’t imperative) a silicone “Brownie Bites” pan.
Directions
Prepare your silicone brownie bites pan with baking spray. If you don’t have a brownie bites pan, you can use a standard 9 x 9-inch baking pan, create a foil sling and spray with baking spray.
Prep your marshmallows, cereal, pecan pieces and caramel bits in bowls. You will move kind of fast one the chocolate is melted.
In a glass or metal bowl set over a pot of simmering water, melt chocolate chips with vegetable shortening and corn syrup. Once it is all melted, spoon a large spoonful into each brownie bites cavity. on top, sprinkle in 2-3 mini marshmallows, a few cereal pieces, a pecan or two and a caramel bit of two. Work efficiently as you still want the chocolate the hold everything together. Once you have all the “goodies” in place, spoon over another spoonful of the melted chocolate. Sprinkle over the toasted coconut.
Let harden on the countertop for a minimum of 2 hours or until the chocolate bites have hardened so they come out of the pan easily. If you are using just a regular pan, lift the hardened chocolate bits out of the pan and cut to 1 1/2 inch or so squares. Keep out of the sun and at room temperature, but no need to refrigerate.
