It’s Valentine’s Day. Or, well, it will be soon. As I say every year, I am not really into the whole Hallmark “manufactured” holiday, but it is always a good excuse to make some sweet thing. This yea, I mad these Winter Bliss Chocolates. I just made up the name … there is nothing particularly wintry about them. They do have orange and pistachios, which give them a lovely nuance. They are very very dark chocolate, my favorite. Delicious!
Ingredients
12 oz semi-sweet chocolate chips (1 bag)
6 oz butterscotch chips (1/2 bag)
1 can condensed milk
2 tablespoons Cointreau or Grand Mariner
1 tablespoon orange
1 tablespoon butter
1/2 teaspoon salt
1/3 cup pistachios, finely ground
unsweetened cocoa, for rolling
Directions
Prepare a 9×9 inch baking pan with a foil sling. Spray lightly with baking spray.
In a metal bowl over simmering water (or a double boiler), melt chocolate and butterscotch chips. Add in condensed milk, butter, salt, Cointreau, orange extract, and ground pistachios, and combine well.
Remove chocolate mixture from the heat. Pour mixture into prepared baking pan. Refrigerate for 4 to 6 hours.
Once chilled, using a teaspoon measure or small disher, scoop out balls of chocolate. Quickly roll into ball shape and roll in cocoa powder. If your hands get too warm and the mixture starts to stick, place the chocolate mixture back in the fridge for a few minutes and wash your hands with cold water.
