Blueberry White Chocolate Oatmeal Bars

Another quick to make recipe for all you blueberry fans out there. And you don’t even need to have the actual berries in the house because this recipe uses blueberry jam. very pantry friendly and comes together in about 15 minutes. Plus a baking time of 40 minutes or so, you can have these waiting for guests to arrive in a scant hour. Blueberries and chocolate aren’t a combination that I would naturally think of, ut seeing white chocolate isn’t really chocolate per se, it ended up quite lovely.

Ingredients
1 cup old fashioned rolled oats (do not use instant)
1 cup all-purpose flour
1/2 cup sliced almonds
3/4 cup brown sugar, lightly packed
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
3/4 cup unsalted butter, melted
1 teaspoon vanilla
1 cup blueberry jam
1/2 cup white chocolate chips

Directions
Preheat oven to 350 F and create a foil or parchment sling for your 9×9 pan.

In a mixing bowl combine the oats, flour, almonds, sugar, baking soda, baking powder and cinnamon, stir in the melted butter and vanilla. Press about 2/3 of the mixture into the bottom of your foil lined pan. Spread the jam on top, leaving about 1/2″ around the edge. Sprinkle the white chocolate chips over the jam and crumble the remaining oat mixture over the jam and white chocolate chips.

Bake for 35-40 minutes, until the edges begin to crisp and the top is golden. Let cool in the pan for 30 minutes, carefully lift out the foil from the pan and slice into bars. Serve warm (with ice cream!) or cooled, out of hand.
