This is a Blate Sandwich. Or a Bleat Sandwich. Or even a Table Sandwich, if we were to be playing Scrabble and had the letters B L T E and A to play with. A modern interpretation of the BLT, it is a Bacon (B), Lettuce (L; I used baby arugula), Tomato (T), Avocado (A) and a couple of fried Eggs (E). Call it what you want … BLaTe, BLeaT, TaBLe or anything else, it made a yummy lunch.
Ingredients
1/2 avocado, removed from pit and skin, sliced to 1/3 inch thick
3 slices thick cut bacon, oven baked (see my method here)
1 heirloom tomato, sliced to 1/3 inch thick
1 large egg, pan fried
small handful baby arugula
2 slices hearty bread (I used sourdough), toasted
1 tablespoon mayonnaise
salt and pepper to taste
Directions
To assemble your sandwich, I have found the best order of things is the following (in order for the sandwich to hold together whilst eating): On the bottom piece of toast, lay the avocado slices and using a fork, mash the slices into the bread a bit so they stick. Place bacon on top of the avocado, followed by the tomatoes. Sprinkle the tomato slices with salt and pepper. Then place on the egg. On the other piece of toast, spread a tablespoon of mayonnaise and the baby arugula, “sticking” the lettuce onto the top bread. Just before serving join the top layer onto the rest of the sandwich. Cut in half (yes, the egg yolk will run into the rest of the sandwich and onto the plate).
