Ingredients
1/2 cup shortening
1/2 cup butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
2/3 cup cocoa powder
1/2 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon salt
2 cups chocolate chips
2/3 cup candied ginger, chopped
Directions
Preheat oven to 350F. Preparing baking sheets with silpat or parchment paper.
In a small bowl, mix together flour, cocoa powder, baking soda, powdered ginger and salt; set aside. In the work bowl of your stand mixer, cream together butter and shortening until smooth. Beat in sugar, brown sugar, eggs, and vanilla until thoroughly mixed. Add dry mixture into the wet ingredients until well blended. Stir in chocolate chips and candied ginger.
Roll dough into teaspoon-sized balls and place on prepared baking sheet. Bake for 8-10 minutes. Let cool on the sheet for 5 minutes before transferring to wire racks to cool completely.
