Ingredients
1/2 galia melon (or a cantaloupe), cut to chunks
1 pint strawberries, hulled and cut, if large
1 medium red onion, thinly sliced
handful baby salad greens
1/2 cup feta crumbles
a few mint leaves, torn
for the dressing
1/2 teaspoon dijon mustard
juice from two limes
1/3 cup olive oil
1 garlic clove, very finely minced
salt and pepper
Directions
In a small mixing bowl, make the dressing. Whisk together the mustard, lime juice, garlic, salt and pepper. Gently whisk in the olive oil, while continuing to whisk.
In a generous mixing bowl, combine melon, strawberries, red onion, and baby salad greens. Drizzle on just enough dressing to coat and toss. Plate 4 portions and sprinkle with feta and mint leaves.
