Ingredients
3 cups flour
1 1/2 cups vegetable oil
3 eggs
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoon ground cardamom
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup bourbon
1 cup chopped, roasted almonds, or walnuts (optional)
3 cups peeled, cored, thickly sliced apples*
1/4 cup brown sugar
2 tablespoons honey
Powdered sugar, for dusting
Directions
Peel and chunk apples to approximately 3/4 inch pieces. Combine with brown sugar and honey and let sit for 2 hours.
Pre-heat oven to 350F. Grease a 9-inch baking pan (or bundt pan if you have one).
Sift together flours, salt, cinnamon, cardamom and baking soda. In a separate bowl whisk together oil, eggs, vanilla and bourbon. Stir in dry ingredients gradually. Fold in apples and almonds, stirring until well-combined.
Pour batter into pan, spreading evenly, and bake for 1 hour and 15 minutes, or until a toothpick comes out clean. Allow to cool in pan completely. Turn out and dust with powdered sugar and serve at room temperature.
