Honey Lavender Wee Little Bunnies, for Easter

Another Easter Treat! In essence these are just sugar cookies, but in my continued quest of flavor experiments, they are made with honey and culinary lavender extract. Very spring like. Also, I used India Tree “Nature’s Colors” Sanding Sugars which use things like beet juice instead of artificial colors.

Ingredients
1 cup unsalted butter, softened room temperature
1/2 cup honey + 1/4 cup for decorating (optional)
1 large egg
1 teaspoon vanilla extract
1 teaspoon lavender extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
sanding sugar (optional)

You will also need: a mini bunny cookie cutter

Directions
In the work bowl of your stand mixer, cream together the butter and honey until thoroughly combined. Mix in egg and vanilla and lavender extracts. Mix in flour, baking soda and salt until just combined. Avoid over-mixing. Divide dough into two disks and wrap each in plastic wrap. Refrigerate for at least 30 minutes and no more than one hour.

Preheat oven to 325F. Line cookie sheets with silpat or parchment paper.

On e well-floured surface roll out first disk to about 1/4 inch thick. Cut out your bunnies and arrange cookies on the prepared cookie sheets. The cookies will not rise very much so they can be placed close together on the sheet. Bake for 13 minutes or until the edges of the cookies begin to brown. Cool cookies on a cooling rack. Repeat until you have used all of the dough.

To decorate: once completely cooled, brush each cookie with just a little honey and sprinkle with sanding sugar. Let dry completely before storing in an airtight container.
